Part of the Limited Series, this lot from Phucheedeun in Chiang Rai is the result of a remarkable community-led restoration project. Phongsathorn Khunta and the Phucheedeun Forest Conservation Organic Coffee Community Enterprise transformed once-deforested land into a thriving shaded forest ecosystem, replanting fruit trees before introducing coffee. This biodiversity creates a nutrient-rich environment for a mix of Catuai, Caturra, Bourbon, Typica, and Java varieties. The cherries undergo a Natural Anaerobic fermentation, which intensifies the fruit character and body while maintaining overall balance. The resulting cup is indulgent and nostalgic, featuring vivid notes of maraschino cherry and cherry cola with a rich, velvety mouthfeel reminiscent of whipped cream.
