The cherries are picked slightly overripe and undergo controlled resting and fermentation before slow greenhouse drying, resulting in an elegant cup reminiscent of Darjeeling tea with peach tones and a clean lime zest finish.

Founded by Rob Clarijs, winner of Coffee Masters London 2019, the roastery utilizes a state-of-the-art Loring S35 Kestrel and a data-driven approach to source and roast stellar coffees based on blind cuppings and hard data.
